Winemaking

The fruit was handpicked from a Dijon clone 115 block on September 4.
Inoculated with RC212 yeast after a six day cold soak.
Aged for eleven months in a neutral French oak barrel.
Bottled on August 8, 2008.
Unfined and unfiltered. Only 13 cases produced.

Tasting Notes

Deep garnet in color. With aromas of mushroom, earth and sweet black fruits.
Loads of red fruits with silky tannin on palete. Smooth, round and well-balanced.
Decent food wine at 14.3% alcohol.

Gomoku Chirashi (sushi rice mixed with various vegetables),
Inarizushi (sushi rice stuffed into seasoned fried tofu wrappers)
